In case to use Active Noise Cancellation with only one AirPod, use your iPhone or iPad to move to the Settings > Accessibility and then turn on Noise Cancellation with One AirPod. After that tap and hold the force sensor to switch between Active Noise Cancellation, Transparency Mode, and Off ahead.
